If sealed too tightly, pressure can build and cause leaking or the jar to break. We do not recommend standard metal mason jar lids as the salt can cause the metal to rust, which may contaminate your ferment over time.
Specialty fermentation lids: These include airlocks, one-way valves, or silicone gaskets that allow carbon dioxide to escape while keeping oxygen out. This creates a safe, anaerobic environment and greatly reduces the risk of mould. Fermentation jars with airlock lids are ideal for both beginners and experienced fermenters.
Cloth covers: Using breathable fabric such as muslin, cheesecloth, or a clean tea towel secured with a rubber band is a traditional method that allows airflow and gas release. However, it offers less protection from contamination and is best suited to dry-salted ferments with minimal liquid.
